November Recipe of the Month Braised Cabbage

  • 1 medium-sized green cabbage, shredded
  • 1 large onion, thinly sliced
  • 1 cup celery, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fennel seeds
  • 1/2 cup apple cider vinegar
  • 1 cup vegetable or chicken broth
  • Salt and pepper to taste
  • Celery leaves for garnish (optional)


Prepare the Vegetables:

  • Shred the cabbage into thin strips.
  • Thinly slice the onion.
  • Thinly slice the celery

Sauté the Onion:

  • In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced onions. Sauté until the onions are soft and translucent.

Add the Cabbage:

  • Add the shredded cabbage and cook with the onions until both start to brown.

Add the Celery and fennel seeds

  • Stir well to combine the vegetables with the onions and fennel seeds.

Braise the Cabbage:

  • Pour in the apple cider vinegar and vegetable broth.
  • Season with salt and pepper to taste.
  • Bring the mixture to a simmer, then reduce the heat to low.
  • Cover the pot and let it simmer for about 20-30 minutes, or until the cabbage is tender, stirring occasionally.

Adjust Seasoning:

  • Taste the braised cabbage and adjust the seasoning if needed. You can add more salt, pepper, or apple cider vinegar to suit your taste.


  • Once the cabbage is tender and the flavors have melded, remove the pot from heat.
  • Serve the braised cabbage hot, garnished with fresh celery leaves if desired.
